Level 2 Food Safety Refresher

This comprehensive Chartered Institute of Environmental Health (CIEH) approved half day course is designed to refresh the knowlegde of those that already hold a QCA/Ofqual accredited Level 2 Food Safety qualification. It is strongly recommended that knowledge is refreshed every 3 years.

The course reintroduces the principles of food safety and is suitable for anyone working in an environment where food is prepared, cooked and handled. Typical examples may include pubs, hotels, restaurants, supermarkets and retail environments, food and drink manufacturers, hospitals, care homes, nurseries and schools.

It is essential for businesses in order to demonstrate their compliance with current legislation and provides delegates with an appreciation of the basics of good food hygiene.

  • Legislation
  • Food safety hazards
  • Temperature controls
  • Refrigeration, chilling and cold holding of foods
  • Cooking, hot holding and re-heating of foods
  • Food handlers
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment
  • Firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved
  • Understanding of how to control food safety risks (personal hygiene, food storage, cooking and handling)
  • Confidence and expertise to safely deliver quality food to customers

Learning Outcomes:

Duration: 4 hours

Prerequisites: Candidates must provide evidence of having previously undertaken and passed a Level 2 Award in Food Safety in Catering, Retail or Manufacturing which has been awarded by any QCA/Ofqual accredited awarding body.

Assessment: All delegates undertake a formal multiple-choice examination at the end of the course.

Certification: All successful delegates will receive a nationally recognised Chartered Institute of Environmental Health Level 2 Award in Food Safety, which is valid for three years. It is strongly recommended that a half day refresher course is completed every 3 years.
